Pork Chops with Apple Stuffing

2 cups herb stuffing mix
1/2 cup apple juice
2 tblsp melted butter or margarine
1 medium apple, chopped, not peeled
4 pork chops
paprika
1/4 cup apple juice

Combine stuffing mix, 1/2 cup apple juice, butter, and apple in large bowl. Saute pork chops over medium heat until brown on both sides. Add salt and pepper.

Mound stuffing mixture on top of each chop and sprinkle with paprika.Add 1/4 cup apple juice to pan. Heat to boiling, cover, and simmer 10-15 minutes or until pork is done. If pan becomes too dry or chops begin to stick, add a little more juice and a little water.
