Egg Pastry (Pie Crust)

3 cups flour
1 tsp salt
1 cup butter
1 large egg, slightly beaten
2 tbls lemon juice
1/4 cup ice water

Put flour and salt into large bowl. Cut the butter into the flour mixture until the size of small peas. Combine egg, lemon juice and water. Stir into flour and butter mix just to hold dough together. Divide dough, roll out on a lightly floured pastry cloth or bread board. Makes up to three crusts.
