Italian Cream Cheese Cake

2 cups sugar
1 stick butter
1/2 cup Crisco
2 cups flour
1 tsp baking soda
1 cup buttermilk
1 cup coconut
1 cup pecans
5 eggs seperated into yolks & whites

Cream together well 1 stick of butter and 1/2 cup Crisco. Add egg yolks,flour,soda,buttermilk,coconut & pecans. In seperate bowl, beat the egg whites into peaks then fold them into the cake mixture. Pour the cake mixture into 3 round cake pans (greased lightly & floured). Bake at 350 for 25 minutes or until toothpick inserted in the center comes out clean. Cool.

Icing:
Mix together 1 - 8 oz pkg softened cream cheese, 1 stick butter softened, 1 box confectioners sugar, 1 tsp vanilla, & 1 cup finely chopped pecans. Assemble layers with icing in between , finishing with the top & sides.
